No doubt you’ve seen people in seafood restaurants carrying around huge bags of ice, and maybe you’ve wondered why they do this.

Today, we’ve got the answer for you.

Ice, and in particular ice flakes, helps to preserve the seafood and to keep it fresh. The reason for using ice flakes is that their regular shape is gentler on the fish and shellfish and because this has a much greater surface area in contact with the seafood, ice flakes are more effective than cubes. But it’s important that the ice is only ever made from clean, pure water and that enough ice is used when transporting and preparing the produce because otherwise there’s a risk that it’ll spoil.
